Hi all. I have cooked a roast chicken for dinner today. Has anyone any ideas what I can do with the leftovers tomorrow? Thanks. x

EE day have a savoury "fried" rice dish, add it to a curry sauce, pasta bake, chicken noodle soup or with some hellmans extra light mayo and sweetcorn with a baked potato, coronation chicken with fresh apricots. LOL I have some chicken to use too!

Chicken Paella (with prawns if you have any),
Chicken and Bacon Sandwich or Salad filling
Chicken Biryani
Chicken and Sweetcorn Quiche
Mix with chopped garlic, red onion, tinned tomatoes, herbs and black pepper and chillies, bring to the boil and simmer, gorgeous on sweet potato with a HE cheese, or jacket potato or rice.
Stuff peppers with chicken, mushrooms, onions and cheese

i would use it with tinned tomatos, garlic and chilli flakes - chuck in some veggies and have it with pasta and cheese.

I'd make a pasta dish using penne or bows etc. Chop up and cook some bacon, garlic, peppers, mushrooms and onions. Add to the cooked pasta, stir in a tin of toms. Put in a casserole dish and cover with grated cheese and bung it in the oven.
On EE you can eat as much as you like so long as you remember to syn any extra cheese.
