Extra Easy Aubergine

I got one sitting in my fridge looking a bit fed up. Anybody got any ideas on what I could do with it as a snack maybe. Nobody else will eat aubergines in our house, not even disguised in something else lol.

My hubby and I love aubergines and that is the only thing none of my kids will eat.

Last weekend I made stuffed aubergine and it was really yummy.

I halved the aubergine, took out the "meat", and diced it. I chopped up some mushrooms and tomato, fried them all with garlic in fry light. I mixed these with cous cous and stuffed the lot back into the shells, topped by grated cheddar. Put them into the oven until the cheese melted and browned.
Free, with 1 HEXa for the cheese. Really yum and filling too.

You can "roast" them in the oven and make a spread which Jamie Oliver calls poor mans caviar I think. I cut them into slices spray them with frylight and do them on the George F. I'm growing baby striped ones this year, but I stopped buying them as they sit in the fridge till they go off! OH thinks they're right up there with courgettes!
