I made these last night for tea and they were lovely, I think this would work equally well for leeks but as I have an abundance of courgettes, this was super!
Thinly slice courgettes - I used 6 smallish ones for the 2 of us
Thinly slice an onion
Fry both in fry light for a few mins then add 100ml of chicken or veg stock and simmer gently for 8 mins or until courgettes are tender.
Add a handful of chopped fresh herbs, I used basil and parsley. Mint is also good.
Take off the heat and stir in 150ml FF Fromage frais.
Absolutely gorgeous and syn free
