Bolognase Stuffed aubergines - Syn free!

Loves Life!
Per person: Quantity to suit your own needs, as with a gastric band, I eat a lot less than you guys! Lol

1 medium sized aubergine
Lean mince beef
Garlic
Half onion
mushrooms
courgettes
Red and yellow peppers (I cant eat green ones, but you could add!)
Passata
Mixed herbs
1 16g Boursin cheese portion

Method
Slice aubergine in half, cut out the inside and dice to add to the bolognase (no waste in my house!)
Put aubergine halves on baking tray spray with a little frylight and soften in oven (pre heated 200 C)

In frying pan, soften onion and mushroom with garlic, add courgette, peppers and aubergine and fry until everything is soft, but not burnt.
Add mince and fry until almost cooked.
Add passata and mixed herbs and heat altogether.

Spoon mixture into slightly softened aubergine halves and cut the Boursin cheese into quarters. Place 2 on top of each half and put back in oven until boursin has melted and everything is cooked.

I love this just as it is, but nice with syn free chips for an EE day.

Im making this tonight with turkey mince so will report back in the morning!
