HARD BOILED EGGS....

Slow but sure....
Does anyone have any idea's of how to peel a hard boiled egg cleanly......

I have just peeled my eggs and most of the white has refused to come out and is stuck in the shell!!!

I boiled my eggs for 10 minutes, then plunged them right into cold water until they were cold - then I rolled them gently to crack the shell, and the shell would not come away cleanly even when I tried to de-shell the eggs under water.

What am I doing wrong? Any idea's anyone.
 
It's not working for me....I don't keep my eggs in the fridge, I wonder if that would have something to do with it?...
 
The freshness of the egg is the big factor here. The rule is the fresher the egg, the harder it is to peel.

The 'membrane' just inside the shell is a bit saggier the older it gets so makes the shell slip off easier.

It is the opposite of poaching them, which is best done when they are freshest.

I was going to say they sound fresh to me!
 
They are from my own chickens, so they are very fresh eggs.

Also I boil my hard boiled eggs from cold water, I put the eggs in cold water with a bit of salt (to 'set' the egg if it crack's) then let them gently come up to boil, then as I have a ceramic hob I turn the ring off as the heat is retained, and then after 6-10 minutes (depending on size) I plunge them into cold water....

Next time I am going to put them into boiling water and see how I get on.
