Lunch Ideas

Anyone got some lunch ideas, I am just planning my menu for next week. I tended to just have sandwiches before starting the diet and to be honest I was bored stiff of them anyway and now being limited as to how much bread I can have a day I am hoping for some new ideas.

By the way I HATE cottage cheese lol - so recipes that avoid that if possible please.

thanks

hi ya,
ok i hate cottage cheese to, i mean just the smell makes me gag but the syn free quiche is fab, you cant taste the cottage cheese at all. all you do is mix 3 eggs, add 227g or nlf cottage cheese, then add your flavours. i add ham, red pepper and sweetcorn. I also add mixed herbs (dried). If you still have HEX left then grate your cheese allowance an add that. mix well. then pour into a quiche dish and put in oven on gas mark 6 for 1 hour, and it is god dam yummy. i have also had salmon and brocalli and bacon and tomatoe. both very tasty.
you can have this with a salad.
chicken and bacon salad
these are just a couple of ideas, hope they help.

On green days I have things like pasta salads, I have masses of pasta with whatever I fancy in it really! I love tuna (HEB), sweetcorn and red pepper mixed with some light salad cream (synned). Or make a yummy potato salad. I love boiled new potatoes with pepper and red onion with some extra light mayo (and gum as you don't want onion breath for the rest of the afternoon!)
Or have cous cous (made with stock so that there is extra flavour) with heaps of roasted veg.

On a red day have things like marinated chicken drumsticks (take skins off and marinate in some LF yoghurt and curry paste, then oven cook for 25 minutes) with a big green salad.
Or a nice tuna salad or seafood stick salads (or both!)

Hope that helps!

green : noodle stirfry with crunchy veg, jacket potatoes, pasta&pesto saladas, veggie frittata
red: salads with smoked mackrel, eggs, cooked chicken, tuna, cooked quorn sausages, lean bacon

good luck!:)
