GAZPACHO! Why did I not think of this sooner!

I have been keeping a batch of Gazpacho, a really fresh and vibrant tasting chilled soup, in my fridge and it has become a real staple and lifesaver, so thought I would share in case anyone else is like me - still finds themselves wanting to nosh a bit, but just a piece of fruit or veg won't do.

This is a pretty guilt free snack, that can not only be used as a chilled soup, but I have tossed a shrimp salad with it, put it over pasta, added extra chilis, coriander and some cheese over a jacket, for a bit of mexican flair....imagination is key!

Super easy to make, and so so GOOD!

GAZPACHO

1 lb tomatoes
1 red pepper
1 green pepper
1 red chili pepper
1 red onion
1/2 cucumber
2 Tblsp Oilive Oil
2 Tblsp Red wine vinegar
1 T caster sugar
Salt & peppar

Cut it all into chunks, seed the peppers and chili pepper, throw it all in the food processer and blend on high for as long as you want to make it as smooth as you want, thought it always retains some texture unless you seive it, which I think is pointless- removes the healthy bits doing that!

Chill it, and enjoy.

I calculated the ingredients and the nutrition info follows. It is for the entire recipe, not a serving. One recipe makes A LOT, so you can work out by dividing the figures, etc.
