Hiya, I have found a recipe for coconut macaroons which should work using sweetener instead of the sugar as in the recipe as I know that lemon meringue can be made in such a way. Not enritely sure how much sweetener so i would say trial and error.

Ingredients:

2 Egg Whites
5-6oz Sugar (sweetener, not sure of quantity as I said)
6oz Desiccated coconut ( 8 1/2 syns per 28g so 51 syns total)
5-6 Glace cherries to decorate (1/2 syn each, so 3 syns)
Rice paper sheets ( couldn't find the syn value, sorry)

whisk the egg whites until frothy.Whisk in the sweetener, then gradually add the coconut. The mixture should be just firm enough to roll into balls.

Roll into balls and place on baking sheets lined with rice paper, leaving room for spreading.Press 1/2 a cherry into each ball.

Bake in a preheated oven 180C / 350F / Gas mark 4 for 18-20 mins.
For stick macaroons, put a dish of water in the oven while baking.

Leave to cool on the baking sheet, then cut out the macaroons.

Makes 10-12.

Syns per mararoon with no rice paper: 4 1/2 if u make 12
