I had some salmon fillets last week. Marinated over night in dried chilli, lime juice & fresh coriander.... was lovely. I dry my own chillis and use the jif lime juice if I do not have fresh.
Another favourite is Cajun spiced salmon.... I buy the large tub from Makro, it lasts about a year and is much cheaper than Schwartz... just dust the fish & grill. I also do this with lemon pepper. very quick & easy... I usually use salmon, but any fish would do...both are also fantastic on prawns & chicken too
